I’m attending a dear friend’s baby shower tomorrow. I wanted to bring something special to contribute and I thought it would be fun to use some edgy and inspiring ingredients, ingredients that might stretch people’s minds… and possibly inspire new relationships with food.

I chose two recipes. The first I came across in Body & Soul Magazine. I followed a Fudge Brownie recipe but modified it a few steps further… I substituted coconut oil for butter and brown rice syrup for sugar. It already included whole wheat flour and sweet potato puree. I topped it with shredded coconut and pecans. They turned out decadent and delicious!!!

The second recipe was from my favorite foodie site – 101Cookbooks.com. Carrot/Oatmeal Cookies also included whole wheat flour as a base, coconut oil and maple syrup. I added raisins, shredded coconut and lemon zest. Definitely a healthy hit!!!
